This is a simple dish that can be served as a light meal or as an aside.
2 cups cooked salmon - chunks
2 cups packed fresh basil leaves –chopped
1 cup grape tomatoes – halved or quartered
¼ cup red onion - chopped
¼ cup fresh oregano - chopped
¼ tsp. tarragon
2 cloves garlic - sliced
1/4 cup pine nuts – roasted
1 Lb. pasta (of choice)– cooked
2/3 cup extra-virgin olive oil
Kosher salt and freshly ground black pepper - to taste
1/2 cup Parmeggiano – grated
While cooking the pasta, sauté the garlic until lightly brown and remove from heat. Mix the basil, oregano, tarragon, nuts, tomatoes and onions and salt and pepper.
Drain pasta well and add to oil in pan; toss well. Add the rest of the ingredients and toss to mix.
